McCoy, Eileen Marie

McCoy, Eileen Marie, was born on June 18, 1964, at St. Jude Hospital in Fullerton, California, the 8th of the eleven children of Dr. Gordon and Mrs. Helen McCoy. Eileen grew up in Fullerton, attending grammar school at Laguna Road School and junior high at St. Mary's Catholic School. She attended Rosary High School, graduating in 1982. While at Rosary, Eileen was a gifted athlete, playing varsity softball, basketball and volleyball from her Freshman year on. She was named Freshman Athlete of the Year, Sophomore Athlete of the Year, Junior Athlete of the Year and Senior Athlete of the Year, and was twice chosen the Most Inspirational Athlete. As a Senior she was Student Body President. Eileen received her Bachelor of Arts degree in English from California State University, Fullerton, in 1987. She went on to teach junior high at St. Angela Merici School in Brea from 1989 to 1997, and coached volleyball, basketball and softball there for many years. In 1997, Eileen began her employment at Servite High School in Anaheim, first as a Religious Education instructor from 1997 until 2000, and then as an English teacher for the remainder of her tenure, holding the position of English Department Chair for several years. Her excellent teaching skills were also played out on the Servite volleyball court as an assistant coach. Eileen was devoted to her Catholic faith. She became a Certified Catechist with the Diocese of Orange in 1989, was a commissioned Eucharistic Minister and regularly conducted children's Sunday liturgy at St. Angela Merici church. In 2011, Eileen was inducted into the Rosary High School Wall of Fame, which annually recognizes alumnae with outstanding athletic achievement or contributions to Rosary athletics. However, Eileen's greatest achievement was her deep devotion to her many students and the tremendous moral, ethical and spiritual inspiration she provided to them. She was a true friend and a devoted daughter, sibling and aunt, and will be greatly missed by all who had the honor of being part of her life. Eileen was preceded to Heaven by her father, Gordon H. McCoy, M.D., and is survived by her mother, 5 brothers, 5 sisters, 36 nephews and nieces, and 11 grandnephews and grandnieces. The Mass of Christian Burial for Eileen will be celebrated at 11:00 a.m. on Monday, December 16, 2013, at San Antonio Catholic Church in Anaheim Hills. In lieu of flowers, donations can be made to Servite High School in Eileen McCoy's name, listing "Eileen McCoy" in the subject line. These monies will go towards a scholarship in her name for financial aid for a student(s) in need.
